Easy Authentic Enchiladas Recipe

Ingredients
12 corn tortillas
2 cups shredded cooked chicken (or beef, pork, or beans)
1 can (10 oz) red enchilada sauce
1 ½ cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
2 tbsp vegetable oil
Fresh cilantro, for garnish
Sour cream, for serving
Instructions
Warm the tortillas: Heat a little oil in a skillet and lightly fry each tortilla for a few seconds on each side, just until pliable.
Fill and roll: Spread 2–3 tablespoons of enchilada sauce on the bottom of a baking dish. Dip each tortilla in the sauce, add chicken and a sprinkle of cheese, then roll it up. Place seam-side down in the dish.
Top with sauce and cheese: Pour remaining sauce over the enchiladas and sprinkle with the rest of the cheese.
Bake: Bake at 375°F (190°C) for 20 minutes, until cheese is melted and bubbly.
Serve: Garnish with fresh cilantro and serve hot with sour cream, rice, or beans.
Tips for Easy Enchiladas
Shortcut filling: Use rotisserie chicken or leftover cooked meat.
Make it vegetarian: Swap the meat for beans and sautéed veggies.
Extra flavor: Add chopped onions or green chiles to the filling.
