Prep Time: 10 minutes Cook Time: 15–20 minutes Total Time: 30 minutes Servings: 4
Ingredients
2 lbs chicken pieces (drumsticks, thighs, or wings)
2 cups buttermilk (or regular milk with 1 tbsp lemon juice)
2 cups all-purpose flour
1 tsp salt
1 tsp black pepper
Vegetable oil, for frying
Instructions
Soak the chicken: Place chicken in a bowl and pour over the buttermilk. Let it sit for at least 15 minutes (or up to overnight in the fridge for extra tenderness).
Coat the chicken: In a large bowl, mix flour, salt, and pepper. Remove chicken from buttermilk and dredge in flour until fully coated.
Heat the oil: Pour about 2 inches of oil into a large skillet or pot. Heat to 350°F (175°C).
Fry the chicken: Fry chicken in batches for 15–20 minutes, turning once, until golden brown and crispy. The inside should reach 165°F (74°C).
Serve: Place chicken on paper towels or a wire rack to drain. Enjoy hot and crunchy!
Tips for Success
No thermometer? Drop a pinch of flour into the oil—if it sizzles, it’s ready.
Crispier chicken: Double-dip in buttermilk and flour.
Quick sides: Serve with fries, salad, or corn on the cob.
