Ingredients

  • 1 baguette or Italian bread, sliced into ½-inch pieces

  • 2 tbsp olive oil (plus extra for brushing)

  • 3–4 ripe tomatoes, diced

  • 2 cloves garlic, minced

  • ¼ cup fresh basil, chopped

  • 1 tsp balsamic vinegar (optional)

  • Salt and pepper, to taste

  • Optional: grated Parmesan for topping

Instructions

  1. Toast the bread: Preheat oven to 400°F (200°C). Arrange bread slices on a baking sheet and brush lightly with olive oil. Toast for 5 minutes or until golden brown and crisp.

  2. Prepare the tomato topping: In a bowl, combine diced tomatoes, minced garlic, chopped basil, balsamic vinegar (if using), salt, and pepper. Mix gently.

  3. Assemble the bruschetta: Spoon tomato mixture evenly over toasted bread slices. Drizzle with a little extra olive oil if desired.

  4. Optional garnish: Sprinkle with grated Parmesan cheese or additional fresh basil before serving.
