Ingredients
1 baguette or Italian bread, sliced into ½-inch pieces
2 tbsp olive oil (plus extra for brushing)
3–4 ripe tomatoes, diced
2 cloves garlic, minced
¼ cup fresh basil, chopped
1 tsp balsamic vinegar (optional)
Salt and pepper, to taste
Optional: grated Parmesan for topping
Instructions
Toast the bread: Preheat oven to 400°F (200°C). Arrange bread slices on a baking sheet and brush lightly with olive oil. Toast for 5 minutes or until golden brown and crisp.
Prepare the tomato topping: In a bowl, combine diced tomatoes, minced garlic, chopped basil, balsamic vinegar (if using), salt, and pepper. Mix gently.
Assemble the bruschetta: Spoon tomato mixture evenly over toasted bread slices. Drizzle with a little extra olive oil if desired.
Optional garnish: Sprinkle with grated Parmesan cheese or additional fresh basil before serving.
